In Scripture, there is a lot of 8 symbolism, and it has to do with new beginnings and resurrection. The ark carried eight people through the flood - Noah and wife and three sons and their wives. From these eight all humanity emerged. Eight was the remnant which escaped judgment - the germ of a new world. The waters receded and eight people got on land to start again. Resurrection and new beginning. I summed up after reading the bible and understanding 8 it is about action.
It was the first day of the week that Jesus rose - or the eighth day if you count from the previous Sabbath. Early Christians understood that.
